Ken and I visited the new cupcake bakery
in Fort Collins today. We love Happy Cakes in
Denver but it is not always feasible to drive
that far for a cupcake so we were excited to
try the new store.
We both had a cherry almond flavor.
There are huge chunks of dried
cherries in the batter.
The frosting is softer than Happy Cakes,
but still very good.
We also got a lemon meringue.
Haven't tried it yet but it looks very yummy.
And of course a chocolate. If the frosting I got on
my finger is any indication this will be good too.

Oh my goodness, what a fabulous idea. Let's start a cupcske bakery in Wellington. We could do what the Europeans do and be sold out by 9...the rest of the day would be ours. Janet
